Oreo Cheesecake Shooters

Ingredients

90g Oreo crumbs

5 tablespoons butter, melted

900 grams plain cream cheese

1 3/4 cups icing sugar

3 cups whipped cream

50g Oreo Cookies for garnish extra

Instructions

Combine the Oreo crumbs and the melted butter and press the mixture into your choice of container.

Whip the cream cheese on high speed until smooth and creamy. Add the icing sugar and continue to whip on high speed until well combined.

Fold the whipped cream and the coarsely crushed Oreo cookies into the cream cheese mixture with a rubber spatula just until well combined.

Pour the cream cheese mixture into the prepared pan and smooth out the top.

Chill the cheesecake in the fridge for at least 2 hours and remove to room temperature for 20-30 minutes before garnishing.

Strawberry Cheesecake Shooter

Ingredients

16 oz cream cheese, softened to room temperature

1/4 cup sour cream

1 tsp vanilla extract

2 cups icing sugar

1/2 cup heavy cream

10 Strawberries – 3 for garnish

100g of crushed vanilla biscuits

Instructions

In a blender/smoothie maker, blitz the Strawberries until they reach a near liquid consistency.

Beat together the softened cream cheese, sour cream, vanilla extract and strawberries until completely combined

Gradually stir in icing sugar.

Slowly add heavy cream, stirring until combined.

Place mixer into your chosen container and place in fridge.

Crush the vanilla biscuits and chop remaining strawberries to garnish the cheesecake when ready to serve.

I left off the crushed vanilla biscuits on some of these shooters as we had some guests that couldn’t eat gluten. Without the crushed biscuits, it is a gluten free dessert, so it can work both ways which is very handy.

Again I left the crushed biscuits off of some of them to turn it into a gluten free dessert.

Chocolate Moose and Jelly Shooters

For these I just brought packet mixes to make life that little bit easier. I garnished the chocolate moose with strawberries as I had some left over. The same could easily be done with the Jelly. Garnishing anything whether it be meals or desserts is an easier way to make anything look more presentable.
